Mercimek Çorbası

Mercimek Çorba means lentil soup in turkish. This is one of my favorite soups and it is very simple to make. This soup are made in many different ways, and I got this recipe from my father who is from Turkey.

This is what you need:

2 dl red lentils

4-6 dl water

1 union

1-2 garlic

1-2 dried chili (if you want it hot)

2 table spoons tomato puree

2-3 table spoons dried mint

Salt

Pepper

Cayenne pepper

Chicken fond or bouillon

1-2 table spoons margarine or oil

Lemon


First take the lentils in a saucepan with water. take the peeled onion, garlic and dried chilies in the saucepan(This is just for the taste) .Once it has begun to boil, let it boil for 90 minutes. Leave it to simmer on a low heat, but make sure it doesn't get burned by stirring occasionally. Add some more water if it gets very thick.

When it has cooked for 90 minutes, melt margarine or some oil. I used oil this time.Then, take the tomato puree.

And let it simmer like this.

I personally, love the smell when the tomat puree gets “fried.” Now you can take det dried mint, cayenne pepper, black pepper and salt with the tomato puree. You can use every spices you want, but the I mean that the dried mint is the most important spice, because it leaves a great taste in the soup.

Stir it together, and have a little water so it does not burn. Then you put it in to the soup and ad a some chicken fond or a boullion cupe.( Obs: You can take out the union and the garlic from the soup now, if you want)

Stir it together and let it cook for about 10 minutes. I know it has to cook for a long time, but it is totelly wourth it. If you don't it everything up, you can put the soup in the fridge and have it later:)

Squeeze som lemon in your soup, and scoop it up! Yum Yum


You can have this soup as a starter, or you can have it as a main course with some bread. In Turkey they often have it as a starter because it awake your appetite, but don't eat to much, because it is very hearty.
